Bourbon Balls
These bourbon balls were served at a Kentucky Derby Day Party hosted by a classmate from the Air Force Academy, Emil Monda, and his wife, Michelle.
- 1 cup chocolate chips (6oz.)
- 3 Tbsp. light corn syrup
- 12 oz. box of vanilla wafers (mashed in food processor to make a fine crumb)
- 1/2 cup bourbon
- 1 cup chopped nuts
- 1/2 cup sugar
- Sugar to roll balls in
Melt the chocolate over a double boiler. Stir in the sugar and corn syrup. Add the bourbon. Stir in mashed vanilla wafers and nuts. Form into 1 inch balls and roll in sugar.
Allow to ripen in a closed container for AT LEAST 2 weeks. A month is better so that it really mellows.
