Chimichurri Rub
Beef short ribs that have been cut crosswise with a meat saw produce long strips that are 1/4 to 1/2 inch wide and are perfect for grilling quickly (two minutes to a side) over a hot fire. These ribs are available at Sam's and Costco. This is the perfect rub for seasoning the ribs before cooking.
- 1 Tbs. coarse salt (kosher or sea)
- 1 Tbs. dried oregano
- 1 tsp. freshly ground black pepper
- 1 tsp hot red pepper flakes
- 2 cloves garlic, minced
- 1 to 2 Tbs olive oil
Place the salt, oregano, black pepper, hot pepper flakes and garlic in a small bowl and stir to mix.
Place the short ribs in a baking dish. Sprinkle the chimichurri rub on both sides of the ribs, rubbing it into the meat. Lightly drizzle olive oil over the ribs on both sides, rubbing it onto the meat. Cover the ribs with plastic wrap and refrigerate them while you set up the grill.
